VitaMix AntiAging Persian Cucumber Pudding
My VitaMix Anti Aging Persian Cucumber Pudding is a simple and easy anti-aging, nutrient dense, totally delicious pudding with toppings that you can eat anytime of the day – breakfast, lunch dinner, snacks and dessert.
Who would have thought that substituting Persian cucumbers for apples would turn out so incredible? I did.
And it does.
Persian cucumbers and Medjool dates make the pudding. Top it off with walnuts, raisins, cinnamon and shredded coconut and you have one of the most delicious meals ever.

Today I am making my Anti-Aging Persian Cucumber Pudding. Persian cucumbers are short, slim, crunchy cucumbers that you find in those little markets and sometimes Trader Joe’s has them in a 6-pack, already packaged. I broke up about 4 cucumbers, 4 Persian cucumbers, and I’m putting them into the VItaMix. Just break them up into some chunks and put them in there.
PULSE
Then take 2 or 3 Medjool dates, remove the pits, you don’t want to accidently throw them in the blender with their pits, take those out and add one, two, three into the VitaMix. That’s all there is to it to the base. We’re gonna pulse that together, put it in a bowl, add some toppings and you are going to have a lunch that will energize you, nourish you, and keep you going throughout the afternoon. You can add to it a little cinnamon, perhaps a few walnuts, a few raisins, a little bit of dried, shredded, organic coconut.
Another simple, easy, anti-aging recipe that you can use for breakfast, lunch or dinner. Persian cucumbers, Medjool dates, and some delicious toppings of your choice. Time to eat.
Exciting
This is uniquely delicious. Who would have thought that Persian cucumbers can substitute for apples? They have the same type of juiciness, crunchiness, ans whereas the apple is sweet, this is more mellow and neutral and makes a fantastic base for a sauce. So instead of applesauce, make Persian cucumber sauce with your toppings. Just looking at that gorgeous, emerald green color, just knowing how I’m going to feel as I eat it and after I eat it is exciting. Mmm….
