My VitaMix Anti Aging Easy Almond milk is an understatement. It’s not only easy, but sweet and delicious to drink on its own or to use as a base for any number of smoothies, shakes, elixirs and concoctions.

It is also perfect for pouring over cereal and is a calcium rich, bio available, delicious alternative to dairy and soy.

It’s very simple, all you have to do is start out with some raw almonds, soak them overnight, the next day drain off all that brown water, we don’t want that and rinse and wash the almonds really well before you get started. Then measure out 1 cup of the soaked almonds and add those to the VitaMix.

You also want  to add to the VitaMix 3 cups of pure water. I have already added 3 cups of water to the VitaMix and now am adding the 1 cup of already soaked almonds. It takes about a minute on high speed to blend this into a smooth, silky, creamy white liquid. So let’s get going, I’m going to time it for you. (Blending.)

I just timed that, it was 45 seconds. And this is what you end up with, I hope you can see this. Now we are going to strain it. Simply pour your blended almond milk into the juice bag. Go ahead, get it all out, you don’t want to miss any of the goodness.

Draw up on the string, which closes the juice bag, and squeeze. You will really be surprised at how much liquid and how little waste is in this liquid. I’ve juiced many ways, and this method really works. You know how almonds smell a little bit like cherries? That cherry aroma is wafting up from the bowl and it is wonderful.

Squeeze and wring like you’re doing the laundry. This wonderful substitute to dairy and soy is full of calcium, almonds have a lot of bio available calcium in them and it doesn’t matter what age you are at,we need it – infants, toddlers, children, teenagers, baby boomers.

Look, that’s how little almond pulp is left. You can save that and use it in other concoctions, which we will get to another day. Now I want you to rinse out your blender and get all the almond pulp residue out of it. Then we are going to pour our pure almond milk back into the blender.

You only have to go to this step if you want to flavor your almond milk. You can drink the almond milk just as it is, the flavor is so pure. If you’re using it to pour over sweet cereals or with other sweet foods, you don’t need to flavor it, it’s delicious just as it is.

But, I want to go overboard a little bit and make it truly a drink all on its own and to be able to use it as a base for other shakes and smoothies. So I’ve got the almond milk in the blender and back on the blender base. Add to it 1/2 cup of my Nectar of the Gods Sweetener, those are the soaked dates.

So, I have flavored the almond milk with the NOG and am now adding a tablespoon of vanilla and a couple shakes of cinnamon. Now, we’re going to mix that up. I’m going to start it on low because I don’t want it to blow all over the blender, then I’ll walk it up a little bit, it only takes a few seconds to mix this up. It smells luscious.

Finally, we get to drink it. I mean I get to drink it :)

Worth the effort. Truly delicious. You have to try this. Cheers. It’s wonderful. It’s luscious and sweet.

The way I store this is I pour it into a jar, put it into the refrigerator and it can stay nice and cold for a few days and then I have it as a base to pour over cereals and to use in smoothies, shakes, concoctions, elixirs or any delicious thing I can come up with.

Raw hazelnuts/filberts are easy to find and can also be used to make non-dairy “mylk.” Just as with almonds, these nuts should be soaked in advance. As you say in your videos, it is better to start somewhere. Using not truly raw almonds for a nut mylk is far better than using animal milk. Keep your videos coming!

I would think you will get 3 days in the refrigerator.Once I make it I use it up fast because it’s so good and I enjoy it so much! I don’t think it’s ever lasted longer than 2 days, but it’s still so fresh at 2 days that I don’t see why you can’t get a third day out of it.Let me know how your experience goes and what you made with it.         Hi Anna,

        I modified the fabulous BUCKIES recipe on page 176 from Jeremy Saffron’s book The Raw Truth, The Art Of Preparing Living Foods – available in SHOP BIMI in the menu bar, to which I added 1/2 cup dried, shredded coconut, 1 tsp sea salt and 1 TBS cinnamon:

        2 cups date, soaked until soft
        2 cups water
        1 tsp vanilla extract
        4 cups sprouted buckwheat

        Mix and massage thoroughly in a bowl until well combined. Spread on dehydrator sheets 1/4″ – 1/2″ thickness – make sure to use parchment paper (not wax paper) or non-stick dehydrator sheets on your dehydrator trays so they don’t stick. Dehydrate at 105 degrees for 12 hours – 14 hours or until crispy.

        Break into crackers or crumble into granola. So good.

      Hi Jennifer,
      I carry juice / nut milk bags in my store, just click on SHOP BIMI in the menu bar.
      I wash mine by running them under water to remove the debris and sometimes soak them in a teeny bit of bleach in a sink full of water and air dry them.
      I sometimes store mine in the freezer to keep the microbes at bay or just hang them up on a kitchen hook.

    Hi Elsha,

    I haven’t made almond flour, but if I did, I would soak the almonds, then dry them in the dehydrator or in an oven at 105 degrees until they are crisp again, probably overnight, then grind them in a spice grinder or in the dry container for the VitaMix until they are a flour. Do some googling and see how others do it. You may have to experiment.

    As far as I know, nutritional yeast flakes do not contain B12 unless they are fortified with it. When I am concerned about B12, I take a supplement from Dr. Gabriel Cousens Culture of Life store. I am not the last word on these topics, so google around and see what other info you can get and that will help you get clarity on the subject.

I do freeze almond milk in ice cube trays and use for smoothies, shakes, ice creams and salad dressings, so freezing is an option.

Also, how long does the almond milk last for? Finally, how do you know if the almond milk or meal has gone bad?

    I absolutely love your videos by the way. Thank you so much. One last question, in your chocolate icecream you put some green powder stuff. What exactly is that and where would I buy it from? Am I correct to assume that it is a dry version of many of our greens?

      Hi Tam,

      Congrats on making your own almond milk. It has become a staple in my fridge.

      The almond meal will last in the fridge for a few days in a sealed container. There are many recipes for using it in cookies and crackers on goneraw.com and other websites. I haven’t separately dried it out in a pan. I haven’t had almond milk go bad on me, probably because I use it up so fast in smoothies, shakes, soups, with raw choc goodies, etc. and it has lasted a full week in the fridge and if it separates, I just give it a stir.

      Yes, the greens powder is simply dried greens, I get it from Whole Foods, at the moment I can’t remember the brand. I don’t use it often as it is expensive and I make raw choc treats without it all the time, so you don’t have to have it.

      Hi Tam,

      Yes, you can use fresh greens in chocolate ice cream recipes. Make sure you dry them thoroughly so that no extra water is added to the recipe, or you will end up with a smoothie instead of a sorbet or ice cream.

      The amount depends on how much green taste you want in the final flavor. Start with one leaf, you can always add more.

    Well, I finally made your nut milk! You know how you when you taste something really good, you usually do the 3 MMM MMM MMM’s? Well after I made your batch of milk with the nog and vanilla…It was 7 MMM MMM MMM’s!!! I actually made two batches. The sweetened one I made, I froze into cubes for ice cream. -And I think the unsweetened batch isn’t going to stay unsweetened much longer! It is incredibly easy to make. The only problem I had- my first batch I used a recipe that called for 4 cups of water instead of three, and that was a slight problem because I have the smaller blender container. Your recipe with three cups was much better and all I had to do was stick a little piece of paper towel when it started to foam out. LOVE LOVE LOVE this new world of nutmilk!

      I don’t really have a recipe per say, but if I was going to make it right now, I’d pour:

      -2 cups fresh almond milk (I made some last night) into the VitaMix
      -a TBS or two of raw cacao
      -a splash of vanilla or 1″ vanilla bean
      -2-3 Medjool dates, pitted (or sweetener of your choice to taste)
      -a handful of ice if you want it chilled, or you can leave the ice out and blend until steamy (approx 4 min) for ‘hot chocolate’

      Let me know how it comes out and now I want some.

    Hi Jane! I love your video’s! Thank you for sharing all that you have learned. My question is on how to store any left over almonds that have been soaked? Can I store them in the refrigerator in a glass container? And for how long? I don’t want to dehydrate them because I’d like to make more almond milk. Thank you!!

      Hi Jane,
      Not only do we have our name in common, but storing soaked and drained almonds is easy. I put them in a glass jar or bowl and put them in the fridge, sometimes not even covering them, and they are ready for blending into almond milk at a moment’s notice. I also have a bag of soaked almonds in the freezer as I write this, so both ways work. I have stored them in the fridge for max 2 weeks, if they last longer than that in the fridge I don’t know because I use them up.

    I was a bit skeptical but am a believer now! I wasn’t quite sure how it would taste without the dates et al but was really happy with the result. I didn’t soak my dates but put whole pitted dates in and though I had to blend it on high for about 30 seconds, the result was amazing. Thanks!
