My VitaMix Anti Aging Cashew Corn Chowder is all about comfort food. The healthy fat in the cashews coats our nerve endings and helps us feel good.

Not only are cashews high in healthy fat, they are high in fiber and iron and rate a 100 score on the amino acid scale.

High quality fat and protein equals high quality and deeply nourishing comfort. This fabulous recipe is adapted from Ani Phyo’s Raw Cashew Corn Chowder.

It calls for 3 1/4 cups of fresh, sweet corn, which I shaved from the cobs this morning. You only need to add 2 1/4 cups to the blender and save a cup of it for the garnish.

This recipe I originally got from Ani Phyo, an elegant and creative raw food chef that comes up with the best concoctions. Her original recipe calls for yellow corn, but all I could find was white corn so I’m using that and I know it’s going to be just as good.

Then add in 2 cups of water, I made a couple of other modifications to Ani’s recipe and I’ll tell you about them as I go along. And then, 1/2 cup of raw cashews.

We know that raw cashews are high in fat, that’s good. That’s the good fat, the comforting fat that also nourishes you, that fills up those empty spaces.

The other things about cashews is that not only is it high in the good fat, it is also high in fiber and iron. One of the other modifications I made to Ani’s recipe is she calls for 6 TBS of extra virgin olive oil, I’m only adding two. I just don’t need that much oil. The recipe comes out terrific, I have made this many times.

And then add one tsp of kosher sea salt, hers calls for two, but I adjusted the salt down just a little bit and it’s still really good. And then a small clove of garlic and I also adjusted that down to a half of a small clove. I love garlic but when you’re using raw garlic it’s really got some punch, and for this I find that I personally like a little less garlic, but you can add more if you want to.

Let’s blend it up, 1-2-3 in the VitaMix and you’ll see how creamy and elegant it comes out, start on low and walk it up. That’s all there is to it. No bits or chunks, it’s silky smooth. pour it into some glass bowls, because then you can enjoy the gorgeous, creamy color, look at that.

And remember that corn that we saved? Garnish with some fresh corn, a dash of black pepper, sprinkle a little on and some chopped cilantro. And here’s another thing most people don’t think about raw cashews, all we think is fat, fat, fat, but in reality there’s a lot of protein in them.

They are 100 percent complete on the amino acid scale, they have all 9 amino acids. Let’s give Ani’s recipe that I have modified a try. This is the true definition of comfort food, ladies.

Mmm, it has the fat content so it’s soothing, it has the crunch of the fresh, sweet corn in it, a dash of the garlic and cilantro flavors…

Here’s another tip, you can pour this delicious comfort soup into a glass and it becomes a comfort shake. Garnish it the same way with the corn, pepper and cilantro. Drink up or you can spoon up.

THE RECIPE:

  • 3 1/4 c. fresh corn (reserve 1 c. fresh corn for garnish)
  • 2 c. water
  • 1/2 c. raw cashews
  • 2 TBS olive oil
  • 1/2 clove garlic
  • 1 tsp kosher salt
  • 2 tsp chopped cilantro for garnish
  • freshly ground pepper for garnish

Blend everything but the garnishes in the VItaMix for  30-45 seconds until silky smooth. Pour into bowls, garnish, enjoy, be comforted.

I’m thinking next time of heating the corn and water while I’m blending the cashews, then adding the warm corn and water to the vitamix, and blending on a lower speed, for less time, to get a chunkier variation of the same recipe! I also used orgainic EVOO flavored with garlic already, as a quicker way to do it, plus 1/4 cup of organic half and half, to make it creamier. I love my vitamix and I love your videos.     Hi Jane, we just purchased a VitaMix a couple of weeks ago and was thrilled to come across your website. I made this soup today for my husband and I and it was absolutely delicious! I used hot water from my instant hot water dispenser and blended until it was hot. I then added the remaining corn (heated) on Variable speed 2 for 10 seconds and it was perfect! I will definitely make this again! FYI..My whole family is hooked on green smoothies! Thank you for your website and recipes.

  13. [..YouTube..] @NicoletteLynnMusic It’s worth waiting for fresh corn :) You can sub 1/4 avocado for the oil, that way you get whole and not fractured fat.

I am trying to enjoy the different types of produce that come with the different seasons. It’s fun learning what is in season and then finding different ways to use it. Not to mention that this saves money to because the in season fruit is usually the stuff that is on sale!!! (This is how I discovered persimmons, and boy am I ever glad I did!!)

    I Jane, As always I love your ideas and thought you might like this soup that I make quite often in the summer months. It is so very refreshing and it tastes like spring to me. For a single serving I just use 1/2 of an avocado. 1 peeled baby cucumber or half of regular cucumber and just a bit of coconut water and then just a dash Sriracha hot chili sauce. Then just blend…..you can make it puree if you like or if you prefer it a bit on the chunky side just take it to about 3 or 4. You decide. This is one of my fav’s in the summer months. I hope you enjoy it as much as I have enjoyed your site. It is wonderful…I love finding like minded people. Thanks for all.
