VitaMix Anti Aging Broccoli Cucumber Bisque
My VitaMix Anti Aging Broccoli Cucumber Bisque delivers on many levels, the first being taste! Then there’s broccoli’s special ingredient: sulforaphane.
Sulforaphane is found in cruciferous vegetables like broccoli, brussel sprouts and cauliflower. It is a strong anti cancer compound and activates antioxidant pathways at the cellular level.

All it requires is 1/4 cup of fresh, raw, organic broccoli. This is only one ounce and wait until you find out what one ounce of broccoli has in it for us. Add that to the VitaMix.
And then, add one peeled cucumber. cut it up into a couple pieces and add it to the VitaMix. A couple pinches of sea salt, get sea salt if you can as it retains its minerals, it’s not stripped. If we’re going to have salt why not have mineral rich salt, just a couple of little pinches.
That’s all there is to the Broccoli Cucumber Bisque. Now let’s blend it up, gently break the cellular walls and get that sulforaphane working for us.
That was maybe 20-30 seconds of blending, just enough to get that broccoli nice and creamy. Let’s see what we’ve got here. Mmm, fresh, you can taste the cucumber right up front, and the broccoli’s there but it’s not overpowering.
You will enjoy this, a little broccoli, a little cucumber, and then I like to garnish it with a squeeze of lime juice right around the top like that, and a couple sprinkles of dried mint, that gives it a little punch you won’t get from anything else. Mmm, perfect.
Now, what’s the big deal about sulforaphane? Broccoli is one of those cruciferous vegetables along with brussel sprouts and cauliflower. They have a compound in them called sulforaphane. It activates antioxidant pathways at the cellular level, so it has a special antiaging compound, just what we baby boomers are looking for. Plus, sulforaphane is a strong anti cancer compound.
The one ounce of broccoli that I put into this bisque has only 10 calories but 25 grams of water, there’s one gram of protein, a whole list of minerals and both of the Omega fatty acids, 3 and 6, which makes it a good balance.

[..YouTube..] I recently heard that steamed broccoli is actually healthier… I don’t know if this is true, but I think either way, it is still super healthy!! (I have to have my broccoli steamed because I am extremely sensitive to it’s bitter taste when it’s raw)
