My VitaMix 2 Bunch Bonus Day Green Smoothie is one I made 4 years ago and forgot about and then found a note describing it and then made it again today – I’m glad I did.

It’s delicious, sweet and creamy – this recipe makes 1/2 gallon, enough to last from morning until dinner.

Today I am making one of the simplest concoctions you can ever come up with – I was going through my notes thinking what do I want to make today, what am I in the mood for, what do I have the ingredients for? And I came across this note from December 22, 2007. I wrote an email to my sister and I said, “I just put an entire head of romaine and an entire bunch of parsley into the VitaMix with watermelon. It is so delicious and creamy..”

…  it’s almost 4 years since I made that particular combo, so that’s what I’m doing today. And I’ve already loaded up the VitaMix with a quarter of a watermelon. Look at that. Is there going to be room for a head of romaine and a bunch of parsley in here?

First I’m going to blend down the watermelon – that’s all that’s required – then I’m going to add the parsley and the romaine, I mean I have to make some room in here. You see this entire bunch of parsley that I washed and spinned dry? It’s all going directly into the VitaMix right now. Let’s give it another little whirr, because I want to make room for the romaine lettuce. Getting pretty full in here. There’s probably 20 – 30 leaves, so I’m just going to fold them in half like that, and put them into the VitaMix, crunch, crunch, listen to that – and here’s the last of it, look at that.

I Was Desperate

So when I first started drinking my greens this is what I would do, I was so desperate for the nourishment in every way, I would put 2 bunches of greens in there. So here we have a head of romaine, a bunch of parsley and a quarter of a watermelon – and it all fits in the VitaMix. Now let’s whirr it up. Just push it in there like that… …snap the top on… I like to use the tamper, because you need to push on this a little bit. And If you think it’s going to blow through the top, just put a cloth around it until you get it started.

That was probably 30 -45 seconds, and you’ll be able to see as the greens break down and the blend becomes smooth. You won’t even see any bits. The thing about making 1/2 gallon of green smoothie in the morning is that you can pour it into several jugs, a fruit jar, these are good because they have tops and you can transport them. Then maybe something like a tumbler, by that time, you’ve poured it all into glasses which you can put in the refrigertor and enjoy by yourself or with friends and family.

Don’t worry if, when you go into the refrigerator to retreive your green smoothie it has separated a little bit, that’s okay, just take your straw and stir it up a little bit. …big gulp, sorry…. mmm… it’s perfect. The romaine and the parsley and the watermelon are a creamy, dreamy, soft flavor. It’s soft.
