VitaMix Anti Aging Luscious Delicious Emerald Spinach Dip

Today, I have a special guest. My friend Sheryl is joining me.
SHERYL: I’m so happy to be here, Jane. It’s so exciting to be sharing in your green smoothies and elixirs.
JANE: I’m very happy to have you here, Sheryl. Sheryl is going to make for us her anti-aging, anti-oxidant green spinach dip, and it is luscious. I know that because I’ve already had some. Sheryl brought it to a function last week where Sheryl and I and two other women meet every month. After I tasted it, I asked Sheryl to come on and make it and she said yes. This is great, Sheryl, what do you do first?
SHERYL: I actually got this recipe out of Vegetarian Times and what I think is so great is it’s a really wonderful way to introduce greens into your children’s and friend’s lives.
We start out with 1 1/2 cups of white beans, in this case I’m using cannellini beans and we’re just going to throw these right into the Vita-Mix® here.
And then we’re going to add 1/2 teaspoon of sea salt.
Then we add 2 TBS of olive oil and I like to use extra virgin olive oil. I must tell you that olive oil has a lot of really good properties to it. It’s known to raise good cholesterol, as well as a colon cancer prevention. So, that’s a nice benefit.
JANE: I love that this recipe is full of anti-cancer compounds. We all know that spinach has iron in it if you’ve been watching Pop-Eye or if you’re old enough to remember who Pop-Eye was, which I am. Are you?
SHERYL: Oh, yes.
JANE: Spinach also has in it anti-cancer compounds that are called flavonoids and there are 13 flavonoids in spinach. That’s really important. This is not only a delicious dip, but it is healthy for us, anti-aging and anti-oxidant. Ok, what’s next?
SHERYL: Now, we’re going to add 1/3 cup of filtered water. I’m putting in all of the liquid and softer ingredients in here first and that’s going to help when we get to the point of blending in the Vita-Mix®.
What I’m going to do here is show you how I easily and quickly skin the garlic. The recipe calls for 1/2 clove of garlic, but I love garlic and am adding 2 cloves. Garlic has many good properties to it. It lowers cholesterol, it’s also known to be a mosquito repellant, it’s also supposed to help with acne, and it’s also a natural antibiotic and anti-oxidant. So, I say, the more garlic, the better.
JANE: I love garlic.
SHERYL: This is a nice, easy way to skin garlic – just take a wide knife, place it on top of the garlic, take the palm of your hand and hit the knife.
JANE: That’s smashed.
SHERYL: As you can see, the garlic slips right out of the skin, no problem. Pop it in the blender. I’m actually using 2 cloves of garlic so we can have lots of garlic in our recipe.
JANE: Mmm, I wish viewers could smell this, I love garlic, I grew up eating a lot of garlic, so I know.
SHERYL: Then, the last ingredient we add to the blender is the 2 cups of spinach, I like to use organic when I can, and I really like spinach, so I am actually adding a bit more than two cups, because I figure the more spinach, the better.
JANE: That’s how I make my green smoothies, the more greens the better, so go ahead and pack it in.
SHERYL: Now, this is the tool time portion here, for all the guys watching, they’ll love this, this is quite the machine.
JANE: It is, it’s 2+ horsepower. (Blending now. Approx 20-30 seconds.) It look gorgeous, I love that color of green.
SHERYL: Use a spatula to get this beautiful dip out of the Vita-Mix®. I want to get every last drop out of here. Then, what I like to do is take some nice, organic cherry tomatoes and slice them in half and place them around the dip as a garnish. This is going to be fabulous for a holiday party. If you need something to take to a holiday party, take this beautiful, bright green dip.
JANE: Look what we can dip into it.
SHERYL: Yes. Anything and everything. We have some pumpernickel sticks, which my daughter loves…
JANE: Pita points…
JANE and SHERYL: Mmm, Mmm, delicious, wonderful…
JANE: I have a function to go to on December 11, a Christmas party, this is what I’m going to make. You can up your game and dip fresh vegeys into this dip.The bright orange of the carrot sticks, the bright green of the spinach dip, the bright red of the tomatoes… this is not only delicious but anti-aging and anti-oxidant. I hope you will make it.

Vita-Mix Anti-Aging Luscious Delicious Emerald Spinach Dip Recipe:
1 1/2 c. white beans, rinsed and drained
2 TBS olive oil
1/2 tsp sea salt or to taste
1/3 c filtered water
1/2 clove garlic
2 c fresh spinach
Load ingredients into the Vita-Mix® in the order listed and blend for app 20-30 seconds or until creamy smooth.

One great substitute for the garlic is to add half a lemon. I love garlic, but don’t always like to smell like it. The lemon flavor fits nicely where the garlic would have been.

I presume the beans in the can used in this recipe were cooked before canning. I’ve never heard of raw beans in a can…
