Ric's Chocolate Avocado Pudding
My VitaMix blender whipped up Ric’s Chocolate Avocado Pudding in 20 seconds or so. Ric from San Antonio submitted this creamy, rich pudding and I just had to make it.
I’m glad I did. I love that it is not too sweet, but if you want it sweeter add another date or two. So delicious! Many thanks to Ric! Watch the video for tips and info and to see how easy it is to make this anti-aging chocolate treat. Recipe below.

This Is Anti-Aging
I have this beautiful Haas avocado, it’s perfectly ripe. Now you know this is going to be a creamy and rich pudding. A pudding with no dairy in it, no cholesterol, but with the wonderful goodness of the whole fat of the super nutrient dense avocado. And of course, it’s green.
1/4 cup of my Nectar Of The Gods Sweetener. It is simply Medjool dates which are pitted and you can soak them in either regular water, plain purified water, or coconut water. The actual recipe includes the coconut water, because the coconut water infuses the dates with a flavor that is so delicate and delicious and sweet. It makes it a really special sweetener. Where else do you get a sweetener with fiber in it?
1/4 cup of the raw cacao powder. You can use any kind of cocoa powder you like. Once you start using this, it’s tough to go back to the other, cooked chocolate powders. But it’s okay, I’m not setting any standards here for you. I’m just letting you know that it’s a fantastic alternative. This organic, raw cacao powder is full of antioxidants, iron, magnesium, flavenols, polyphenols… It’s 100% cocoa with no additives. And I love that it’s organic. Into the VitaMix, 1/4 cup….
Looking Good
… after you add the raw cacao powder, add 2 teaspoons of vanilla extract. Looking good…. then 1/4 tsp of sea salt. Then gradually add one TBS of water at a time or the almond milk to achieve a creamy consistency. So let’s add a little bit, do a little blending and see where we’re at. Ric wrote in and said, “Hi Jane, I recently bought a high-speed blender and have been making smoothies with your help. I wanted to share my favorite pudding recipe with you. Don’t be shocked that there’s avocado in chocolate pudding. The avocado gives this pudding a rich, creamy texture. It has all the ingredients that you use in your recipes. I think you’ll love it.”
I don’t mind getting old and I don’t mind looking old, but I don’t want to feel old. When I eat these waterful foods I don’t feel old, I feel young, I feel like I can do anything. Mmm… you are right, Ric from San Antonio. It’s thick, creamy and luscious. The whole fat from the avocado, the sweetener that is really all fiber – the medjool dates and the coconut water – the vanilla… dash of sea salt… I put about a tablespoon of the almond milk in here… you could even make it without any extra liquids at all, I think.
Feeling Good
But to me, this is anti-aging – nutrient dense, super delicious foods that I feel fantastic on, because that’s what I think is the definition of anti-aging. It’s how you feel. Ric from San Antonio, thank you. Really delicious. If you want it sweeter than this, just add more dates. It’s not that sweet, but it’s delicious, and I like that because we get plenty of sugar. Mmmm….

[..YouTube..] That looks good!
[..YouTube..] Cacao still has caffeine…you should try raw or roasted carob sometimes. I always use carob instead of coco or cacao and it taste great in all my recipes.
[..YouTube..] @theknuts6 So delish – I poured a little almond milk over it and it was good!
[..YouTube..] @edeneating Right you are – but it’s so good
I do use carob and meant to mention it as a sub but I forgot.Either way, chocolate or carob, it will be delicious. Thanks for posting the info, as I know there are others who don’t want the caffeine.Jane

[..YouTube..] @KravJitsu1 It’s worth it – it’s not too sweet, which suits me (and Ric), but if you want it sweeter, add an extra date or two.Enjoy and come back and let us know what you think.Jane

[..YouTube..] This sounds so good. I have a large bag of avocados perfectly ripe for this just sitting on my counter looking bored. My nectar of the gods is freshly made and oh so lonely and syrupy in the fridge. I’m making this tomorrow. Can’t wait!!
[..YouTube..] @zungodra Definitely make and enjoy this wonderful and nutritious dessert, which is also very satisfying and please come back with your review. Many thanks, Jane.
[..YouTube..] After using the raw cacao powder, does it need to be refrigerated?
[..YouTube..] @MoviesTubeYou0675 I don’t refrigerate mine, but check the packaging, just to be sure.:)Jane
[..YouTube..] @blenditandMendit Thank you.
Hi Jane:
Made this pudding tonight. I have a BlendTec Blender so I have to make changes as to the order of ingredients added. I used the measurements as in the recipe with these modifications. Used dark cocoa as I did not have any raw cacao. When using the dark, it really stands out, so I added more dates and 1 frozen banana. Also added more almond milk to get the consistancy I wanted. Other than that what a great chocolate fix……
To the previous comment, I put some chia seeds in finished product to gel up and make firmer pudding…left it overnight and in the am what a treat…thanks again
This was fantastic! My mother gave up chocolate years ago (a former chocoholic) and I made this for her with carob. I think I was more excited for her than she was to taste this. The avocado gave this such a creamy consistency! To die for!
So…I made this luscious pudding today and was trying my darndest to get every last bit out of the bottom of the blender when I thought to just change it up and drink it out. I added about 6-8 oz of almond milk, 3 or 4 ice cubes and a couple more spoons of nectar of the Gods and spun that around. Voila, a drink pretty much like the frozen ice caps and such that everyone else around here is drinking (while I drink iced green tea). Pretty decadent I’d say and healthy too.:)
Hi Abby,
Sounds like something I’d do as I am always trying to scrape every last drop out of the blender – bravo.
