Rebecca's Chocolate Pear Pudding

Juicy and Delectable
Today I am making Rebecca’s Chocolate Pear Pudding. And of course, she suggests we *clink* with some Beauty Water. So I made some Cucumber Water to go with it. Hi Rebecca, how are you doing? As soon as I got this recipe, I wanted to try it.
Rebecca’s Chocolate Pear Pudding is so simple and easy. All it requires are 3 Medjool dates. Remember to take out the pits. One pear cut into small pieces. I used a ripe Bosc pear. Remember, when you’re using fruit in your waterful recipes, you want it to be ripe, you want it to smell like it’s supposed to, so that it will be juicy and delectable.
1 TBS of almond butter. Here’s the link to how to make nut butter in your VitaMix (cashew, almond, etc.), here’s the jar that I made myself. It’s less expensive if you buy the almonds, put them into your VitaMix and whip it up and make some almond butter. 1 TBS of raw cacao or raw chocolate powder. You can use any kind of chocolate powder you want. I really like this stuff. Now, I realize some of you are sensitive to chocolate or you don’t want to eat it. That’s fine, I go in and out of my chocolate thing, too. So you can substitute this with carob powder. It will still be delicious.
This is optional, but I went ahead and I sprinkled a little bit of shredded, dried coconut on top of the pudding because I couldn’t resist the color contrast. Wow. If you want a chocolate treat with a whole food sweetener, the dates…. the juiciness that comes from a whole food fruit, the pear… and the raw chocolate powder, this is the one to make. This is really wonderful. This makes a fabulous breakfast, a fabulous dessert. When you make these whole food concoctions, you can eat them for any meal or any part of a meal.

Don’t they go together beautifully? This is the Cucumber Water. Wow, it is so mild and fresh. It’s the perfect compliment to the chocolate. Remember when I made the Raw Chocolate Truffles and I made a Beauty Water with that? Go ahead and check out another delicious *clinky” green water and raw chocolate recipe.
These waterful foods are anti-aging. I know they are, because my definition of anti-aging is that I feel good. I feel like I can do anything; and if that’s not anti-aging, I don’t kow what is – so I hope you will try this. If you modify it and use a different type of fruit, let me know what it is. Blend the pudding by pulsing if you would like to have bits of pear, bits of dates in there to give it chewiness. If you want to whip it up into a mousse like texture, run it on high until it’s all combined wonderfully. Either way is delicious. Today I pulsded mine to give it some texture.
Rebecca’s Chocolate Pear Pudding Recipe
3 medjool dates, pitted
1 ripe pear, cut in pieces
1 TBS almond butter
1 TBS raw cacao or carob powderPulse for chunky, run on high for mousse. Enjoy!
Cucumber Beauty Water
1 cucumber, peel if not organic or pesticide free
3 cups waterBlend smooth.

Jane – I’ve seen you sprinkle coconut on several deserts such as this and the chocolate truffles. Are you using your own shredded coconut or store bought? I can’t find anything on your site or the web about making shredded dried coconut other than dehydrating with a machine. Can coconut can be grated in the Vitamix then oven dried? Are there any smoothie recipes that use the coconut meat?

I am using store bought shredded, dried, organic coconut that I get from Whole Foods or other stores. I would tell you the brand but I don’t have any in the fridge at the moment.
Yes, coconut can be shredded in the VitaMix and then dried in a dehydrator or oven dried – you have given me an idea to make a video on how to shred mature coconut meat in the VitaMix.

OMG! This was so good. I made mine like mousse, I can’t believe how good it is. I also put some shredded coconut on mine. I have 2 Bosc pears left and I’ll be using them to make more of this.
Isn’t it hard to get out of a big blender container with such a small amount? Anyone have a tip?

It was a little hard to get it out. I have some of the Vitamix spatulas but they don’t bend very well. I used that to get out as much as I could then used a regular spatula to get under the blade and all around the sides. I will be honest and say after that, I used my finger to get out the rest at the bottom, it was that good. Then I put in some almond milk to try and get out the rest.
Can’t help you with the pudding dregs, but I just started making sorbet/icecream 1st thing in the morning so that I could blend my smoothie right after it and not waste anything that wanted to hang onto the blades! And now we have our after dinner treat waiting without having to wash the blender twice.
Glad the pear pudding is such a hit with everyone.

ya know, as I’m thinking about it now, I originally made the pear pudding in a bowl and mushed all of the yummies together with a fork, so I must have been using a very ripe pear! I licked that bowl clean!
