Hi Jane~ Quick question regarding the almond milk (I’m FINALLY making it for the first time, yaay!). I realize you didn’t mention whether or not to refrigerate the almonds while soaking, and I’m sure this is simply commonsense NOT to since this IS considered “sprouting”, but I just wanted to make sure and ask. Hi Dana,
Yes, you’re correct. I soak them in a bowl on the kitchen counter overnight. Be sure to rinse them really well to remove the soak water and the enzyme inhibitors in it.

HI- the season for pomegranates is coming up. I know how to open it easily (cut off ends, score, soak in cold water for 5 minutes and remove the seeds under water…the pith floats to the top and the seeds sink.) Can you make a video for a smoothie using the pomegranate seeds? Thanks.

Hi Jane ~ I’ve learned from you a while back how to open a young coconut and how to scrape the insides to remove the meat, and also how to make your wonderful NOG (among other things), yahta, yahta, yahta. But I JUST now opened a young coconut (which actually had a brownish/pink tone within the fibers AS I was cutting the fibers off of the top prior to popping the lid off. I thought this was odd as I don’t recall coming across this ever before).
Once I was able to dump the water into a bowl, I didn’t see any signs of a pink tinge (or any discoloration for that matter) on the meat BUT the water definitely has a more amber tone to it than I remember seeing before. I know I’m supposed to taste it to see if it’s pleasant, but I’m alittle afraid to (I know, what a wuss, right?). Just curious if you’ve come across this in many of the y. coconuts you’ve opened? Thanks for your time and as always I appreciate everything you do!!! Dana

Right you are, if in doubt, don’t ingest. I return to the store any coconut that’s suspect for any reason.
Most of them are okay, but like you, once in awhile I run across one that just doesn’t seem right and I don’t even want to taste it so back it goes.

Hi Jane, Love all the videos. I don’t even have my Vitamix yet (saving for December!) but I am trying to learn as much as I can so I can hit the ground running:o)
For the N.O.G’s recipe, do you just let the dates sit in the coconut water in the fridge until they soften or do you blend them? Sorry, I was confused about that step. I love the idea of using dates since they have fiber and other good stuff. I use tupelo honey for sweetening my tea, but I would like to use fiberfull sweetener in our drinks. Thanks again, love your presentation, your enthusiasm and clear instructions.

Hi Barbara,
I give it a stir when I happen to be in the fridge. Depending on the variety of dates you use, your NOG may or may not soften enough on its own. When that happens to me, I use it as is and let the blender do the work. If I don’t have NOG on hand, I add a couple of pitted dates.

I have been using my Vitamix for the last 3 months and I love it. My wife and children have given me complete dominion over it!! And I love serving them with my Vitamix.
I had a couple of questions on your proprietary NOG concoction. It sounds fabulous. Now I am trying to make it today. I don’t know how it will come out b’cos I made some variations:
1. I am using regular & NOT Medjool dates .
2. I used coconut water from a can and NOT fresh.
Do you think that would be a problem or would there be a difference?

Thank you for your kind words and support. I appreciate it.
Just be aware that date varieties differ in moisture content and sweetness. If you are using a variety that is drier than a Medjool, it may not absorb the liquid in the same way and the NOG may be lumpier, but that’s okay as it all goes in the blender anyway.
When I don’t have NOG ready, I throw pitted dates in whole for sweetener and it works fine, so that’s a shortcut to keep in mind.
I haven’t used coconut water in a can, but I get mail from those who have and they say it works fun. Do what you can with what you have, that’s all any of us can do.

I made coconut butter last night, or should I say “tried to” (after watching someone else’s video), but I didn’t let the VitaMix run long enough, and definitely didn’t let it run for an additional minute as you state in your video (which I found today). It wasn’t anywhere near as runny as yours was in the video. I also put it in the fridge (big mistake), so now I have a coconut lump in the fridge. Is there anything that I can do to salvage it? Try to melt it and then put it back into the VM? Or should I just cut my losses and start from scratch again?

Hi Chelan,
First, put it on the counter and let it get to room temp – it’s like regular butter – in a cold room it will be harder than in a warm room.
Then see what the texture’s like. It might be a little grainy, but you can still use it.
The batch I made in the video was really creamy and I stored it at room temp and it became solid like a stick of butter -it’s now gone, we ate it all.
Another thing – if you use sweetened shredded coconut or a poor quality product it will never process into coconut butter properly. So for next time, make sure you get organic, unsweetened shredded dried coconut if you can as the quality will probably be good.
