How To Make Cashew Butter In The VitaMix Blender
My VitaMix Anti Aging Cashew Butter is a how-to you can use with any nut! Watch me produce a creamy, sweet, nutritious, luscious cashew butter in a few minutes. No oil added.
Perfect for use in shakes, smoothies, sauces, dips, dressings, spreads and all by itself on the spoon

All you have to do is get yourself 24 ounces of raw cashews, and I’m using 24 ounces because that’s what the VitaMix manual recommends. Pour these into the VitaMix container, and you end up with 4 cups of cashews. Of course you can do this with almonds or any other nut butter that you want to make. You need a good amount because once you put the top on and you use the tamper, when the machine is running you’re going to be pushing the nuts into the blades.
And when that motor’s spinning, they need something to grab onto, so don’t try to make nut butters with a cup or two of nuts. Put in the 24 ounces and you’ll get an easier and better result.
And then just put this on the machine, we’re gonna turn it on, put the variable up to 10, and flip it up to high, right in a row really quick and let it run for about a minute. As soon as the nut butter begins to flow freely, we’re gonna shut the machine off so that we don’t overheat the machine and you don’t need to process it any longer than that. So let’s go, here we go.
I just wanted to mention, I shut the machine off for a second, that you’re going to hear the motor sound begin to chug, and then the nuts will begin to flow freely. That’s when you’re going to be finished and you want to shut the machine off. Let’s finish it up.
Did you hear that pulling sound? The nut butter’s done. We now have a beautiful batch, 3 or 4 cups, of delicious, creamy cashew butter, which I’m going to take out now and store in a jar. I like to store it in glass jars, I think it keeps better and I feel better about it. It’s thick, creamy, luscious, soft and I didn’t have to add any oil to it. What I love about cashew butter is you can add the cashew butter to shakes, you can make sauces, you can make salad dressings, you can use it as spreads, it makes one of the best chocolate shakes I’ve ever come up with. I still have more left, but there’s how I like to store it, in a jar like this, you know, one of those Ball jars, so I can probably get 2 jars like this from the cashews.
Look at that, your own homemade cashew butter, isn’t that luscious? I hope I have shown you how easy it is to make cashew butter in the VitaMix, of course, you can do that with any kind of nuts, including almonds, etc. Look in the next couple of weeks for the recipes I’m going to make using this homemade cashew butter. [..YouTube..] Looks amazing. If I wanted it to be more creamy would I need to add some kind of oil? That would be fantastic to make candy out of. Like if you wanted to make some raw candies like peanut butter cups (only with cashews) you could roll the paste (kinda reminds me of marzipan) it into small balls and put on sucker sticks and freeze and then melt some raw chocolate and dunk the frozen balls into the chocolate and let them set in the freezer. YUM!

It is very important to first soak your cashews to remove the enzyme inhibitors and to allow our bodies to digest the nuts properly. Soaking nuts and seeds awakens the energy, thus arousing its cellular memory to grow and in return their nutritional value increases. So remember to soak your raw nuts. Cashews are a short soak nut–needing only about 2-3 hours. It is best to soak them in spring water at room temp. Drain and rinse well. You can then air dry them or dehydrate them. If you are using them right away in a recipe no need to dry. Soaking them does the following:
*Enzyme inhibitors get neutralized.
*The amount of vitamins your body can absorb increases.
*Digestion is much easier.
*Phytic acid, which inhibits the absorption of vital minerals, is reduced.

Yes, I’ve had it shut off a few times when I’ve really overloaded it!
When it does, that’s the way it protects itself. I just unplug it, wait a minute or so,
and then it starts up again.
It explains it in the manual.

I don’t think it would go rancid in 2 days, depending on your kitchen temp. My instinct is to keep it in the fridge, but when I make my next batch, I’ll try leaving some out on the counter and find out.Curious: why do you want to leave it out? So that it’s soft for use?Jane
[..YouTube..] Hi Again Jane… Yes it is about the consistency of the product, When I purchase my fresh ground almond butter from my local store I usually keep it in the fridge. This works fine for putting some in a smoothie but I have to leave it out for several hours if I want to spread it on crackers or whole wheat bread. I made this but with almonds instead. I enjoyed it but then added some coconut oil and raw honey and REALLY enjoyed it. great spread. I was also reading the latest flyer from my trader joe’s and they sell fig butter. That got me interested in soaking the figs I’ve had in my produce bin and adding lemon juice/zest and the soaking water and blending them into a fig spread for toast. Yumm! It turned out great.

I tried to make raw Tahini in my Vitamix a while ago, but did not use a whole lot of sesame (about 1,5 cups). It did turn out ok in the end, but I had to let it sit and cool down every few moments or else it would have been way hotter than 115F.
Does one have to be wary about that when using a big amount of nuts as you do? And another question: Do you use the regular Vitamix container or the one for grinding for this?
@Elizabeth: when you soak the nuts for nut butter, do you have to dry them before processing? Or is it possible to use them wet and still have butter that keeps well?

Hi Ayoka,
I use the regular container for making nut butters. 1.5c of sesame seeds is a grindable amount. Depending on the oil in the seeds, you may have to add extra oil (like 1/4 cup olive oil) to the mixture while grinding it to get it to flow and process. You can always drain the oil off the next day after it settles.
I use 24 oz ofcashews when I make cashew butter because the blades need substance to latch onto when processing. Sometimes I need to add oil to it to get it to process and sometimes not. Each batch is different.
This is a great way to substitute for peanut butter! I have made almond butter before but the cashew butter is so yummy! My 5 year old doesn’t like almond butter but loved the cashew butter… Expensive tastes! Lol
I wanted to share a smoothie I just came up with using the cashew butter.
2 cups frozen cherries
2 Tbsp of your cashew butter
1/2 Cup of your luscious almond milk
It turned out really yummy!

re: cost of cashews/cashew butter; i’ve found the bulk bins at winco to be the cheapest place to buy raw cashews (here in the pacific northwest). most of the year they run ~$7/pound but in the last month (feb/march) it’s dropped to ~$3.25/pound (must be peak season for cashews where they’re grown). as purchased cashew butter is ~$10/pound this is a significant savings. i bought 20 pounds and am making cashew butter to refrigerate for the remainder of the year.

I’m thinking two weeks or so and I haven’t had any go bad because I use it up, but it probably turns dark and smells stale when it goes bad.
Some folks soak, dehydrate and then grind. I soak, thoroughly drain and thoroughly pat dry if I don’t have time to dehydrate, a step I don’t always want to do.
I made the cashew butter. Yum! It makes alot and I’m not sure I will be able to use it all before it goes bad. Where can I find the other recipes that you make using the cashew butter that you mentioned in the video?
