Wild and Undisguised

Curly endive has that wild, field flavor to it. It’s full of water and slightly bitter and it’s deep, dark green for clean inside and out. It tastes… wild, that’s the best word for it. Isn’t it great when we’ve graduated to the point where we can get our fresh, leafy greens uncooked, unsauced, unsalted, undisguised… it’s liberating and adds a whole new dimension to your life. You gotta try it.

Flavor Hugging

All you need is three ingredients for this wild endive green smoothie. Some watermelon, some endive and a squeeze of lemon. Fill your blender with watermelon. There’s probably 4 or 5 cups in here. I buy the seeded (with seeds) watermelon because those watermelons have more flavor. The very sweetest part is what’s hugging the seeds. So, try to do that. It’s not an inconvenience, it’s a delicious taste experience, is what it is. If you have an organic watermelon, you can use the rind – not in this green smoothie – but I have a watermelon rind green smoothie.

You never have to throw out the rind. You pay for the whole melon, use the whole thing if it’s organic. Then add a handful of curly endive. Curly endive is different than belgian endive, as you can see, the edges are curly and kind of jagged edged. This is a pretty common green and you should be able to find it year around in your regular markets. So you don’t have to shop in any special stores or special order anything to make your green smoothies. Just start looking at the greens differently when you go to the market. Try new ones.

Blend. Sip. Beautify.

Now add a squeeze of lemon, let’s say a couple of tablespoons or the juice from a half of a lemon. Make sure you don’t get any seeds in there because they add bitterness. You can either strain the lemon through your hand or through a strainer. Blend. Sip. Beautify. That’s what we’re doing here.

As you can see, the color of this smoothie is not green. Here’s an axiom for you:

All green smoothies have greens in them but not all green smoothies are green.

This is so refreshing. You have to try this; and if you want to add more curly endive to this than one handful, go ahead. It depends on where your greens taste tolerance is at and where in the green smoothie, greens drinking journey you are at. So fresh, so delicious. I say it every time I make a green smoothie recipe or a Beauty Water.

Don’t Miss Out

I feel so good drinking my greens. I don’t see why you won’t feel this good, too. If all I got from drinking my greens was the positivity and cheer that they bring to me, that would be enough. But there’s a lot more. Greens have so much to offer us. Don’t miss out on them.

Curly Endive Green Smoothie Recipe

  • 4-5 cups watermelon
  • handful curly endive, or more to your taste
  • juice from one half lemon

    I am wondering how wonderful this may also be using wild arugula instead, another rotation option. I love how you are educating your viewers on the importance of greens rotation!! Way to go. You are fantastic at what you do. A gift!!
