Welcome. Today is day 14 of the 21 Day Avocado Smoothie Power Plan and I’m making steaming hot, creamy mushroom garlic soup from page 37. This only took 4 minutes. Throw everything in the blender, turn it on high, walk around the house a couple times and you’re good to go. I am so happy I’m doing this 21 day plan. Every day is another wonderful recipe to try, a great way to start the day.

I’m actually having this for breakfast, you can make it for lunch, you can make it for dinner. If you have a blender at work, you can make it fresh. If you want to keep your soup warm, start out with room temperature water and you only have to blend for about a minute. But if you want steaming hot creamy garlic mushroom soup, then continue to blend on high for 4-5 minutes, until you see steam coming out of the top.

See the steam coming out of the top? Now you have hot soup in 4 minutes. This made 5 cups of Ariel and Lori’s Creamy Garlic Mushroom Soup, so you can get 2 or 3 bowls out of this. I saved some of the mushroom caps, chopped them up and I’m sprinkling them on there as a garnish. And I also am going to add some parsley. Look at that. Is that not luscious looking? Smells fantastic.

Rich and creamy. Garlicky. I like the garlic. I used 2 cups of water in here. You can use 2-3. I would make it even thicker and use maybe one cup of water. This is so elegant. Delicious. The mushroom flavor is so fresh. You never get a flavor like this out of a can. Never. Very satisfying, very delicious. A perfect complement of flavors. Thank you Lori and Ariel, this is really delicious.

    [..YouTube..] Just made it! I use to be a fan of the can mushroom soup because I liked mushroom soup and it was easy to prepare. Then came the soy milk ver, then the almond-cashew milk ver, (very good) now an avocado-cashew ver? WOW! Fresh and elegant is a great description. Creamy too. Thank you all. =D

    Made this for lunch today as I needed something warming and, WOW! This sure fitted the bill. It is full of delicious yummyness !! I needed comfort food and sure have got it in this (after a 2 mile hike in the snow).

    Hi Jane, I finally got to make this soup on Tuesday evening. Although I enjoyed it, next time I think I will leave out the onion as I found that it seemed to be the predominant taste. I wanted to taste the mushrooms more! :) Also, what can I do to reduce the ‘frothiness’ of my soups when I make them in the Vitamix?

      Hi Toni,
      There are a few things you can do to reduce frothiness:

      1.Blend at lower speeds so not as much air gets in there, it’s the air that causes the frothiness. Also, if blending at high speed, reduce the speed at the end to very low and let the air get pushed out that way.

      2. Stir it after you pour it in the bowl to help the air escape.

      3. Let it set and rest a minute or two after finishing – this is what I do and it works.

      4. I’ve read that some people put a drop or two of oil in and that settles the foam, I haven’t tried this.

      Tip – How to Get out “foaminess”:

      Tip 1 from Lea Ann Savage – Vita-Mix Demonstrator

      I learned this a few shows ago from an audience member who had called
      Vita-Mix Customer Service for help because their juices were too “foamy”.
      Now, I teach it to all of my audiences in my demo while I’m doing my
      (previously foamy) Emerald Ecstacy (which I now call “Shrek Juice” when
      there are kids around).

      Tomatoes, Pineapples, and Oranges all tend to get foamy…

      After you have blended the drink on high, switch to variable speed #1;
      look down into the container from above (as long as you keep it on
      Variable at low speeds you can take the lid off, but be careful – if you
      have the lid off and the switch gets flipped to high, you will redecorate
      your kitchen!)

      Anyway, as you are looking down onto the liquid, work the speed up slowly
      until the moment you see a small vortex “hole” in the center of the
      liquid. Stop at that speed and let the juice spin for 30 seconds or so.
      After a bit the air bubbles will pop out of the drink and the hole of the
      vortex will get bigger, lower the variable speed again to keep the hole
      small for say another 30 seconds or so. By then you should be “foam
      free”!

      Tip 2

      A member of our previous group used a gravy separator to get the foam out
      of his soups.

      After blending, he would pour the soup into the separator and waited a
      bit. The foam would rise to the top and he could then pour out the foam
      free soup, leaving the foam in the separator.

  16. [..YouTube..] @lesliehawk They’re both! If two people are in my house when I make them, we both enjoy – if not, I’ll eat what I want right then- sometimes all of it – and have the rest later. I also enjoyed this soup cold later in the day. It was even better :)

    Wow, I just made this oup for lunch. This is by far the BEST mushroom soup i’ve ever tasted. I am not vegan/raw, but i’m inching my way towards better choices and more greens. I cannot believe this recipe has no milk or cream. It’s so creamy ! Yum !!

      I don’t see why not – try it and let us all know.
      This is one of my favorite soups. I eat a bowl hot and later in the day have the rest cold and it’s even better.
