Hi Nicolette, thanks for reminding me. I am going to make a chilled cucumber dill soup today.

Cool Down

It’s really hot where I live. In fact, the entire nation’s having a heat wave. I think this is going to help cool us all down. You can go to Nicolette’s YouTube channel, it’s NicoletteLynnMusic and she’s got not only her recipe there but she sings and plays the guitar, she has a beautiful voice. I hope you will all go visit her channel.

In keeping with my “keep it simple, smoothie” philosophy, this soup only has three ingredients. The cucumber, a couple of dates, any variety, I’m using Medjool, but use what you have or what you can get, and some fresh dill that we’re going to sprinkle on top.

King

This is one of the long, English cucumbers that come in a 3-pack from Costco. They’re certified pesticide free. If you can get an organic or pesticide free cucumber, leave the skin on. If not, peel the skin, cut up into a few pieces and put it into the VitaMix. And then a couple of Medjool dates. Medjool dates are known as the king of the dates because they’re large, moist and sweet. You can use any variety. Remember to take the caps off and to take the pits out. Add the dates to the VitaMix.

Blender Settings

Usually you see me making green smoothies and all I have to do is put the VitaMix on high and make it smooth in a few seconds and we’re good to go. So I ususally don’t mess around with the blender settings too much, but on this, I want this soup to have a more chopped like texture. I want to release the water in the cucumber but I also want to have bits of cucumber in there and bits of dates that mix together that you can chew on. Use the variable speed on the blender, speed #1, you’re lowest setting. Then flip it on and pulse it. Pulse it until you get a slasa like texture.

Cucumber and Dill on a Date

Take a bite. Get a little bit of dates, a little bit of the cucumber and a little bit of the dill. Look at the beautiful colors in there. You’ve got little copper colored bits of dates against the various shades of green. There’s water in that cucumber, naturally purified and structured. There’s silica in that cucumber. There’s flavor in that cucumber. This is perfect. So refreshing. That little bit of sweetness from the dates… the cucumber is a fruit, but it’s a non-sweet fruit. So you can use it in so many green smoothie blends and so many summer soups.

And the dill is a perfect accent. Say you don’t have dill, you can chop up some basil and sprinkle it on, or mint, or any herb that you like. Cilantro or parsley, too. I have the beautiful dill on hand and that’s what I wanted to make, I thought it sound so good… cucumber dill… it works together really well.

    I had it for lunch that day and it was nothing short of AMAZING!!! I even garnished it with 3 ripe green Kiwi, chopped into bite size pieces and it was a party in my mouth. Thank you so much for sharing this PERFECT summer soup.
