Whole Food Fat

Today I am making a salad dressing from Joe & Suzi. You remember Joe & Suzi, here’s the link to the video of their first green smoothie that I made. So, when Joe wrote and said, “I can’t stop eating this!” I just knew I had to make it.

Joe & Suzi’s salad dressing calls for 1/2 cup of balsamic vinegar. I add it directly into the VitaMix. There’s no need to measure it out, because there are measure marks on it. 1/2 of a ripe avocado and that’s your good fat. One ripe tomato. Joe says, “I used a Roma tomato, heirloom would have been better:)” 1-2 cloves of garlic, depending on what suits you. I chose one clove.

Fresh basil – Joe & Suzi don’t say how much. I love fresh basil. I used a handful as you can see. One tsp of sea salt. I’m using the pink Himalayan sea salt. One tsp of fresh, cracked pepper or you can throw in some whole peppercorns, they’ll get ground up in the VitaMix. “Add all ingredients into the VitaMix and blend, starting at 1, go up to about 8, and then drizzle in your water to get the mixture to a nice creamy dressing consistency.” I used the entire 1/4 cup of water that Joe suggested. If you want it any thinner than that, go ahead and add a little more. You’ll be able to tell as you’re blending.

Leafy Green Spatula

I don’t want to waste any of Joe & Suzi’s salad dressing, so I’m using more leafy greens as a spatula. Take a handful, go into your blender and you can wipe out all of the dressing with them. Just remember, the VitaMix blades are sharp, they do cut, be careful and go into the corners and be careful going around the blades. Be aware of them.

I sprinkled some raw pumpkin seeds on this salad, it is the perfect topping.

  • 1/2 cup Balsamic Vinegar
  • 1/2 ripe avocado
  • 1 ripe tomato (I used a roma Tomato, heirloom would have been better!
  • 1 to 2 cloves of garlic (depends on you)
  • Handful fresh basil
  • 1 tsp sea salt
  • 1 tsp fresh cracked pepper
  • 1/2 cup of water drizzled in while blending. Use the water to get the dressing to the consistency of your liking.

Add all ingredients into vitamix and blend starting at 1 up to about an 8, then drizzle in your water to get the mixture to a nice creamy dressing consistency.

No Oils and all good fats and the omega’s from the avocado. What more could you ask for! Joe

  4. [..YouTube..] I made it last night and it was good, but a little too bitter (vinegar) for me, so I added another roma tomato and the other half of a avocado and 1/2 TB raw honey and it was PERFECT!!! Thanks again, it was a good one!

      Hi Amanda,

      Mine was used in a a couple days, but I don’t see why it won’t last 5-7 days. You’ll just have to experiment and see.

    Hello,

    Because I’m the only one in my household who likes this dressing, there’s one portion left 7 days later and it’s still good. I think it’s because of the vinegar that it last for so long.
    @ Jane: By the way, I miss new video’s, are you planning to make some more in the near future? I surely hope so.

        We live nearby the Belgian border, Friesland is about 3-4 hours by car from here. And yes there’s a lot of green. Also a lot of flowers with beautiful colours.
        You live in the USA I assume?
