Hi, I’m Jane from BlenditandMendit.com. Welcome. Today I am going to make a Baby Bok Choy Mango Mint Pudding. No cooking required. You blend it up in a few seconds.

No Regret

It hydrates you. You feel good before you make it. You feel good while you’re making it. You feel good after you eat it. That’s the best reward from the fresh, water filled foods. No regret.

Isn’t Baby Bok Choy adorable? It is a cute little vegetable that’s technically not a green, but when they’re small and tender like this, you can throw the whole little head of baby bok choy into the VitaMix. If you have a large head of bok choy, just cut the green leaves off and use those in your pudding or green smoothie. I’m starting with a ripe, aromatic mango and I’m peeling the whole thing. I know you can eat it out of the peel, but for this I want to peel it around the sides, because when they’re perfectly ripe the skin comes off easily. Then just cut close to the pit and put the meat of the mango into your VitaMix.

And a handful of mint. Just a little bit to perk it up. This is going to have the consistency of a pudding, which is what I want to make. You could add water and turn it into a smoothie. I know from experience that when you use mango like this with no added water, and you make a pudding out of it and you pop it into the fridge, it gels up even more and it tastes so delicious chilled.

Here’s our blender of goodness. Make sure the mango is ripe so it’s at the peak of its nutrition and its flavor. A handful of mint, any variety, you can even use chocolate mint, regular spearmint or any of the herbal mints, lemon mint, maybe? And the baby bok choy.

Blend. Sip. Beautify. That’s what we’re doing.

Isn’t this gorgeous? Look at the color of this puddin’. Really delicious. Smooth. The mango is the overwhelming flavor, the mint dresses it up and then that baby bok choy gives it a little edge, just to let you know this is something special.
