My Anti Aging Cucorumba Salad
My Anti Aging Cucorumba Salad makes good on a promise I made, which was what to do with the meat from the young coconuts we used in the previous Glorious Green Smoothie episode.
In my Anti Aging Cucorumba Salad I combine young coconut meat, cucumber, mint and medjool dates to create a salad so delicious, it leaves me speechless.

A couple of days ago, when I made my Anti Aging Glorious Green Smoothie with all that delicious fresh coconut water, I told you I was going to make something else out of the coconut meat, so don’t throw it out, and that’s what I am going to show you how to do today.
I have scraped out the coconut meat from these two coconuts and I’m going to use it in my Cucorumba Salad, because it combines cucumber and coconut.
The first thing you do after you scoop out the coconut meat is chop it up. It’s very simple and as you can see, it only requires fold the meat over, chop, chop, chop, fold the meat over, chop, chop, chop. Put it into a bowl and you’re done. And of course, the white coconut meat looks beautiful in the black bowl.
Then we’re going to add to it one peeled cucumber. And I use a large, English cucumber, which I peeled and chopped. Now, the coconuts and the cucumber are not organic, do the best you can, the dates and the mint I’m using today are organic, so get organic when you can and when you can’t get organic, don’t stress over it. Do the best you can to get started.
To that we are going to add a delicious, sweet accent, and these are Medjool dates. I’ve taken 6 Medjool dates, here they are whole so you can see what they look like. I’ve taken out the pits and chopped them up. So, we’ve got coconut, cucumber, Medjool dates and the all important garnish, fresh mint.
The aroma of the fresh mint livens up this salad beautifully. If you don’t have mint you can try parsley. So, we’ve got chopped coconut, chopped cucumber, chopped dates and chopped mint.
All you have to do is combine them into a bowl and mix them up. And if your sticky dates won’t fall apart, just take them and crumble them up back into the bowl with your hands, they’re already chopped up so they come apart easily.
And for those of us who really like to get into their food, all you have to do is go in there with your hands and break them apart and mix everything up, and then the moisture from the cucumbers and the coconuts gets in the dates and there you go, they combine beautifully.
What fun would it be if we didn’t eat it? Take a scoop of your Cucorumba Salad and let’s see what we’ve got. Cucumber, date, mint and coconut all on your fork.

And the young coconut and the mature coconut meat are completely different.So many variations in the natural world. After watching a few of your videos (you’re having so much fun, it’s hard to stop watching), I was inspired to soak dates in coconut water to make Nectar of the Gods. I’m also soaking almonds to make an almond milk surprise drink tomorrow. Since going raw a month ago, I’m having so much fun being in the kitchen and experimenting with nutrition.
